Doc's Catfish Stew
(probably stolen from Mrs. Gyro, like most of my other favorite dishes)
Peel and dice onion and garlic clove, place in saucepan with a splash of water. Sauté on high heat for several minutes, then add tomatoes and tomato sauce. Simmer covered on medium heat. Cut catfish into chunks, add to saucepan and replace cover. Turn heat down and allow to cook, stirring as needed. Add dashes of onion powder, garlic powder, and herbs to suit. Simmer mixture for approximately 20 minutes and serve. Excellent over Mrs. Doc's Basmati Rice.
