Gyro's Herb-Infused Olive Oil
Grow fresh rosemary and thyme in an herb garden (you know, I could do a whole section on what a great thing an herb garden is....I also have a fantastic recipe for pesto, requiring fresh basil)
Clean and sterilize an empty salad dressing bottle (I take the labels off with hot soapy water then run them through the dishwasher). Wash and carefully dry rosemary and thyme. Have kids stuff both into the empty bottle. Pour olive oil over sprigs until bottle is almost full, as kids ooh and ahh... Then let them take turns dropping the peppercorns into the bottle as they do a slow-motion fall to the bottom. Cap bottle, place in basement for several months.
Can be used as replacement for olive oil in any recipe where a bit of extra flavor is needed. Also excellent on fresh bread with parmesan cheese!
* Optional ingredients, should be placed in the empty jar first if used.
